Every template is different and may require various tweaks. The first stop is the style sheet, usually named styles.css. Find the section that specifies the content width and increase it.
Once you make the change, preview your site to see if the top graphic is set to a specific size. If it is, there may be a setting in the style sheet for that too. Otherwise, you might have to edit the header graphic to fit the new size.
Instead of a fixed width, you can also play with the settings so the page will adjust according to the screen width. That is done by changing the static width, such as 780px to a percentage, like 80%.
For any change in width, you will have to go through the rest of the style sheet to see if any other areas, such as the footer, are also set to the specific width and change them to match the header.
Again, the footer may have an image that is a specific size and may need to be resized so it does not look stretched.
Sometimes changing the size is easy, while other times, depending on the template, it could be a total nightmare to the inexperienced. Just take your time going through the settings and be sure to preview the changes before moving on to something else.
Most of all, have fun!

Thanks, Jim!
The template company contacted me and said the templates are pretty much as is, but I will try your recommendations.
I know it should be fun...but sometimes is pretty frustrating.
Take care,
